Lemon Garlic Salmon

Want to try a healthy, delicious meal, but you are pressed for time? This lemon garlic salmon is not only scrumptious, but it is also ready in less than half an hour. This Mediterranean method ensures perfectly cooked salmon and the bonus of easy clean-up! Try this for your next family meal. 


Prep Time: 10 minutes 

Cook Time: 18 minutes

Total Time: 28 minutes 

Yields: 6 servings

Ingredients:

  • 2 lb salmon filet or two pounds worth of salmon cuts

  • 2 large lemons, juiced

  • 3 tbsp extra virgin olive oil

  • 5 garlic cloves, chopped

  • 2 tsp dried oregano

  • 1 tsp paprika

  • 1 tsp black pepper

For garnish:

  • Lemon slices

  • Parsley

  • Salt to taste

  • Black pepper to taste

Directions:

  • Preheat oven to 375°

  • In a small mixing bowl or measuring cup, mix lemon juice, extra virgin olive oil, garlic, oregano, paprika, and black pepper

  • Whisk until incorporated

  • Prepare a lined baking sheet with foil (provide enough foil to line + cover the top of the salmon while baking), brush olive oil on the foil, and place the salmon on top

  • Generously season the salmon filet with salt and pepper on both sides

  • Brush the lemon garlic sauce onto both sides; make sure to spread the sauce evenly

  • Fold the foil over the salmon (steam-side up)

  • Bake for 15-20 minutes depending on the thickness of the filet

  • Carefully remove from the oven and open the foil to uncover the top of the salmon

  • Broil for 3 minutes or until the salmon is fully cooked


When the salmon can easily shred with a fork, it is ready to be served. Pair this dish with our healthy Broccoli Rice for a delicious meal for the entire family!
