Marisco Bowl
It is pure nostalgia to think about one of our favorite Mexican restaurants located in Houston, Texas. Gringo’s Mexican Kitchen has one of our top five all-time favorite meals. This Marisco Bowl is a versatile dish with the traditional sides inside! This meal is a whirlwind of flavors, totally customizable to your family's or guests' preferences. So whether you are surf, turf, or vegetarian, this is the perfect meal for you to try in your weeknight rotation.

Yields: 6 servings
Ingredients:
Tortillas of your choice
1 lb shrimp, chopped
1 lb crawfish
1 cup scampi sauce
1 cup white queso, medium heat
16 oz refried beans
20 oz arroz con rojo, Spanish-style rice
1 tbsp taco seasoning
1 tbsp of butter or olive oil
cilantro for garnish (optional)
Directions:
In a skillet on medium-low heat, add butter or olive oil
Add shrimp and cook one minute per side, set aside in a medium-sized bowl
Add crawfish to the skillet, cook for two minutes, stirring occasionally, and set aside with shrimp in the medium-sized bowl
To the shrimp/crawfish mixture, add the scampi and white queso sauce
Mix until fully incorporated
Add taco seasoning and stir until incorporated
In the empty skillet, add refried beans on the bottom as the first layer
Add rice as the second layer
Add your seafood mixture as the top and final layer
Broil on high for 3-4 minutes
Garnish with cilantro
Serve with tortillas or tortilla chips
This dish comes together quickly and can be paired with whatever options work best for you. You can replace the seafood with a steak and chicken combination. Dress it up or dress it down however you like- serve it as tacos, or as a hearty dip, it will definitely be a hit at your next fiesta!
