One Pan Greek Chicken And Potatoes

Ingredients:
1 lb of new potatoes
1 lb skinless chicken thighs
3 tbs olive oil
5 tbs garlic, minced
2 tbs oregano
2 tbs thyme
2 tbs herb de Provence
Salt (to taste)
Pepper (to taste)
Shawarma seasoning (optional)
Zatar (optional)
Homemade Tzatziki Sauce:
Half a cucumber (grated)
2 cups Greek yogurt
2 tbs garlic, minced
1/4 cup lemon juice
Zest of one lemon
Finely chopped dill
Salt (to taste)
Pepper (to taste)
Directions:
Preheat oven to 400°
Slice new potatoes in halves, place them in a baking dish
Place chicken in your baking dish, and coat with olive oil, garlic, oregano, thyme, herb de Provence, salt, pepper, shawarma, and zatar
Combine until seasonings are evenly coated
Add lemon juice
Add lemon zest
Bake for about 35-45 minutes or until chicken skin is crispy
Tzatziki Sauce Directions:
Grate half a cucumber
Drain excess liquid with a tea towel
Add Greek yogurt, lemon juice, and lemon zest into a bowl
Add garlic and chopped dill
Mix well and season to taste
